Graeme, i like the third picture. Because it has the best of both worlds per say. You get that new feel but still get the custom side of it. I say go with that one.

it is good but what if you move the searchbar to the left to be inline with the sidebar and make the touch of menu in the side

I must ask ... you are dealing with IBP & xF ... what is your opinion in both specially in skinning

you should make the background seperated above like now but use like in the 3rd pic but start the new color below the level of the menu

Technically I find them both really easy to skin for. As with all systems, it just takes a bit of time to get used to where things are positioned, but in the end, I can do anything I want with IPB and XF. I can move anything anywhere, and make anything look however I want. Obviously I am still getting the hang of XF so I would say things take a tiny bit longer to do, but it's not hard .

Shadow, litle bold text would bring make the text more appealing.
